Nothing quite says traditional Christmas dinner like a pork cutlet, does it?
I don't like turkey, therefore I'm not going to spend 4 hours cooking the damn thing. Ditto on ham. Last year I made Cornish Game Hens with teryaki marinade but Peter, my father-in-law, said no itty bitty birds this year.
So I made breaded pork cutlets with a butter cream sage sauce, redskin potatoes roasted in rosemary and garlic with onions and the inevitable green bean casserole with cream of chicken soup versus the traditional cream of mushroom. Again, I hate mushrooms, so why would I use mushroom soup?
Making cutlets is so satisfying. I love to bang my wooden meat hammer into what used to be some pig's muscle.
Just like I like the yolk of the egg best. It was the baby chicken, after all.
Christmas spirit abounds here, let me tell you.
