Anyone who knows me or reads my blog knows that I am hardly carb conscious. I find the whole idea hilarious. Yeah, tell an Italian woman to cut out carbs. Riiiiight. My idea of carb conscious is paying attention to my bread while I use it to scoop the pasta neatly unto my fork.
We did, however, have a "light" dinner tonight. I made blackened tilapia, saffron rice, the ever present green beens and biscuits.
Tilapia is a very delicate whitefish and since I abhor fried fish, I tend to grill or bake it. I use our indoor electric grill, covered with foil, on medium heat. I coat the tilapia with butter and blackening seasoning and grill it for about 10 minutes on each side. It comes out moist, flaky and with a nice amount of the blackening flavoring.
Yep, the biscuits were right out of the Pillsbury can. Gotta love the Doughboy.
