As always on Sunday evening, Martin's folks came over for dinner. I was doing some searching earlier this week for something different to do with chicken and checked out cooks.com and epicurious.com. (Epicurious.com is one of my favorite places to waste lots of time imagining meals.) I came across a recipe for chicken with a yogurt sauce that sounded different. Of course, I had to completely bastardize it to suit my tastes and this is what I came up with.
Grilled Chicken Breasts in Spiced Yogurt
2 1/4 cups plain yogurt
Olive Oil
2 1/2 Tablespoons fresh lemon juice
2 teaspoons salt
2 Tablespoons chili powder
2 Tablespoons Garlic powder
1 Tablespoon fresh ground pepper
6 skinless boneless chicken breasts
1 cup mint leaves
2 Tablespoons minced sliced shallots
Whisk together 1 cup yogurt, 2 tablespoons oil, lemon juice and half the seasonings. Add chicken and turn til coated. Marinate at room temperature for 20 minutes. Note: Don't marinate any longer of the chicken will start to deteriorate.
While chicken is marinating, prepare grill.
While grill is heating, whisk together remaining yogurt, 1 1/2 tablespoons lemon juice and 1 tablespoon olive oil.
Grill chicken, discarding marinade. Transfer chicken to a warm platter. Toss together mint, shallot and 1 tablespoon olive oil. Drizzle chicken with yogurt sauce and top with mint salad.
I served this with saffron rice, steamed green beans and fresh bread with a Chardonnay. The yogurt sounds strange, but it's actually very tasty and unique.
